Making the Spaetzle

Prepare the Dough

In a mixing bowl, combine the all-purpose flour, eggs, milk, salt, and chopped fresh herbs. Stir until you have a smooth dough. The dough should be thick but pliable.

Cook the Spaetzle

Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander with large holes, drop the dough into the boiling water. Cook until the spaetzle floats to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

Preparing the Carrot Butter

Cook the Carrots

In a saucepan, bring water to a boil and add the carrots. Cook until tender, about 10 minutes. Drain and let cool slightly.

Make Carrot Butter

In a blender or food processor, combine the cooked carrots, butter, salt, and black pepper. Blend until smooth. Adjust seasoning to taste.

Serving

Combine and Serve

Toss the cooked spaetzle with the carrot butter until well coated. Serve warm, garnished with additional fresh herbs if desired.
