Prepare Home Fries

Cook the Potatoes

Dice the potatoes into small cubes. Heat olive oil in a large skillet over medium heat. Add the potatoes, salt, pepper, and paprika, and cook, stirring occasionally, for about 15-20 minutes until golden brown and crispy.

Prepare Burrito Filling

Cook Chorizo

In a separate skillet, add the chorizo and cook over medium heat until browned, about 5-7 minutes. Drain excess fat and set aside.

Scramble the Eggs

In a bowl, whisk the eggs. Pour them into the skillet and scramble until fully cooked. Mix in the cooked chorizo, black beans, and salsa fresca.

Assemble Burritos

Add Filling

Lay a tortilla flat on a plate. Spoon the chorizo and egg mixture down the center of the tortilla. Top with shredded cheese, salsa verde, and a dollop of chive crème fraîche.

Roll the Burrito

Fold the sides of the tortilla over the filling, then roll from the bottom up. Repeat with the remaining tortillas.
