Preparation
Cut the Potatoes
Wash the russet potatoes thoroughly. Peel them if desired, then cut them into thick strips, about 1/2 inch wide.
Soak the Potatoes
Place the cut fries in a large bowl of cold water and soak for at least 30 minutes to remove excess starch. Drain and pat them dry.
Cooking
Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 325°F (160°C).
First Fry
Carefully add the fries in batches and fry for about 3-4 minutes until soft but not browned. Remove the fries and drain on paper towels.
Increase Oil Temperature
Increase the oil temperature to 375°F (190°C).
Second Fry
Fry the potatoes again in batches for an additional 3-4 minutes until golden and crispy. Drain on paper towels.
Season
While the fries are still hot, sprinkle with salt and paprika to taste.
