Preparation of Fish

Clean and Season the Fish

Rinse the rose snapper under cold water and pat dry. Rub the fish inside and out with salt and black pepper.

Heat the Oil

In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until hot.

Fry the Fish

Carefully place the fish in the hot oil and fry for about 6-8 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Cooking Bok Choy

Sauté the Bok Choy

In a separate pan, heat the sesame oil over medium heat, add minced garlic and sauté for 30 seconds. Add the chopped bok choy and soy sauce, cooking until just tender, about 3-4 minutes.

Making Nuoc Cham

Prepare the Sauce

In a small bowl, mix together fish sauce, sugar, lime juice, water, and chili garlic sauce until the sugar dissolves.

Marinating K-Cuke

Prepare the Cucumbers

Slice the Kirby cucumbers thinly and combine with rice vinegar, sugar, and salt. Let marinate for at least 15 minutes.

Serving

Plate the Dish

Serve the fried fish on a platter, accompanied by sautéed bok choy, marinated cucumbers, and drizzle with nuoc cham. Garnish with crushed roasted peanuts and chopped cilantro.
