Method

Duck Preparation

Prepare the Duck

Preheat the oven to 375°F (190°C). Rinse the duck under cold water and pat dry. Rub the duck inside and out with salt, black pepper, minced garlic, and thyme. Drizzle with olive oil.

Roast the Duck

Place the duck on a roasting rack in a roasting pan. Roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C). Baste with the juices halfway through.

Soba Noodles

Cook the Soba

In a pot of boiling water, add the soba noodles and cook according to package instructions. Drain and rinse under cold water. Toss with soy sauce and sesame oil.

Scallion Pancakes

Make the Dough

In a bowl, mix the flour with boiling water until a dough forms. Knead until smooth. Let it rest for 30 minutes.

Roll and Cook

Roll the dough into thin circles, sprinkle with salt and chopped scallions, roll up tightly, and flatten. Fry in vegetable oil until golden brown on both sides.

Szechuan Plum Jam

Prepare the Jam

In a saucepan, combine plum puree, sugar, Szechuan peppercorns, and lemon juice. Cook over medium heat until thickened, about 15 minutes. Cool before serving.

Hoisin Jus

Make the Jus

In a saucepan, combine hoisin sauce, duck stock, and soy sauce. Heat gently until warmed through.
