Method

Horseradish Soubise

Cook the Onions

In a saucepan, melt the butter over medium heat. Add the chopped onions and sauté until they are translucent and soft, about 10 minutes.

Add Cream and Horseradish

Stir in the heavy cream and bring to a simmer. Cook for another 5 minutes, then remove from heat and mix in the prepared horseradish and salt. Blend until smooth and set aside.

Tortilla Española

Cook Potatoes and Onions

In a large skillet, heat the olive oil over medium heat. Add the sliced potatoes and onions, cooking until tender, about 15 minutes. Drain excess oil.

Prepare the Tortilla

In a bowl, beat the eggs and season with salt. Mix in the cooked potatoes and onions. Return to the skillet and cook over low heat until set, about 5-7 minutes. Flip and cook the other side until golden.

Caper Vinaigrette

Combine Ingredients

In a bowl, whisk together capers, red wine vinegar, olive oil, parsley, salt, and pepper. Adjust seasoning to taste.

NY Strip Steak

Prepare the Steak

Season the NY Strip Steak with salt and pepper. Heat olive oil in a grill pan over high heat.

Cook the Steak

Sear the steak for 4-5 minutes on each side for medium-rare, or until desired doneness. Let it rest for 5 minutes before slicing.

Plating

Assemble the Dish

On a serving plate, place the sliced steak. Drizzle with the horseradish soubise and caper vinaigrette. Serve with tortilla española on the side and garnish with microgreens or cress. Add steak sauce as desired.
