Make simple syrup

Combine the granulated sugar and water in a small saucepan over medium heat. Stir until the sugar fully dissolves and the liquid is clear, about 2–3 minutes. Remove from heat and let cool to room temperature (about 10–15 minutes). If using corn syrup/glucose, stir it into the warm syrup until incorporated.

Purée strawberries

Place the chopped strawberries and lemon juice in a blender or food processor. Add a pinch of fine salt. Pour in the cooled simple syrup. Purée until completely smooth, about 30–60 seconds. Taste and adjust acidity with another 1/2 tablespoon lemon juice if needed.

Pass the strawberry purée through a fine-mesh sieve into a bowl, pressing with a spatula to extract as much liquid as possible. Discard seeds and coarse bits. This yields a silkier sorbet.

Chill the mixture

Cover the strained purée and chill in the refrigerator until thoroughly cold, at least 1 hour (or up to 4 hours). Chilling improves texture when churning.

Churn

Pour the chilled strawberry mixture into an ice cream maker and churn according to manufacturer instructions until it reaches soft-serve consistency (typically 20–30 minutes). If you do not have an ice cream maker, pour the mixture into a shallow metal pan and freeze; every 30 minutes stir vigorously with a fork to break up ice crystals until smooth (3–4 hours).

Firm up

Transfer churned sorbet to an airtight container, smooth the top, and press a piece of parchment directly onto the surface to prevent ice crystals. Freeze until firm, about 2–3 hours.

Finish & Service

Scoop and combine: For each serving, place one generous scoop (about 3–4 oz) of firm strawberry sorbet into a chilled stemmed glass or coupe. Pour 3 oz chilled Rosé slowly over or alongside the sorbet so it partially melts and becomes effervescent with the wine (if using sparkling Rosé) or mingles smoothly (if using still Rosé).

Garnish and present: Add a thin slice of fresh strawberry to the rim and a small mint sprig on top. Serve immediately with a long spoon so guests can stir and sip simultaneously.

Variations & notes: For a more boozy finish, macerate a few tablespoons of diced strawberries in 1–2 tablespoons of Rosé and a teaspoon of sugar for 15 minutes and fold them into the churned sorbet before freezing. If you want the sorbet to hold up longer in the wine, reduce the Rosé to 2 oz per serving.
