Prepare the Rice

Cook the Basmati Rice

Rinse 1 cup of basmati rice under cold water until the water runs clear. In a pot, combine the rinsed rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes.

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and bell peppers, and sauté for about 3 minutes until they begin to soften. Add the broccoli, cauliflower, mushrooms, and diced tomato. Continue to sauté for an additional 5-7 minutes until the vegetables are tender. Stir in the black beans and corn, and cook for another 2-3 minutes until heated through. Season with salt and black pepper to taste.

Assemble the Rice Bowl

In serving bowls, layer the cooked basmati rice first, then top with the sautéed vegetable mixture. Add salsa on top and finish with a generous dollop of guacamole. Serve immediately.
