Prepare the Batter

In a large mixing bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and slightly thick. Let it rest for about 15 minutes.

Prepare the Fish

While the batter is resting, pat the catfish fillets dry with paper towels. This helps the batter stick better.

Heat the Oil

In a large deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Fish

Dip each catfish fillet into the batter, allowing excess to drip off. Carefully place the battered fillets into the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes or until golden brown and cooked through. Use a slotted spoon to remove the fillets and drain on paper towels.
