Tex-Mex seasoned chicken, mixed cheese and fresh diced peppers, melted in a white or whole-wheat flour tortilla. With sour cream and salsa, and choice of Mex rice or side salad.

Cook the Chicken

Heat olive oil in a skillet over medium heat. Add the chicken breasts and sprinkle Tex-Mex seasoning over them. Cook for about 6-7 minutes on each side or until fully cooked. Remove from heat and let rest for 5 minutes before dicing.

Prepare the Filling

In the same skillet, add the diced red and green bell peppers and sauté for about 3-4 minutes until slightly tender. Mix in the diced chicken and combine well.

Assemble the Quesadillas

On one half of each tortilla, layer the chicken and pepper mixture, followed by a generous amount of mixed cheese. Fold the tortillas over to create a half-moon shape.

Cook the Quesadillas

Wipe the skillet clean and return to medium heat. Cook each quesadilla for about 2-3 minutes on each side or until golden brown and the cheese has melted. Cut into wedges.

Serve the quesadillas hot with sour cream, salsa, and a side of Mexican rice or side salad.
