Preparation
Make the Cajun Spice Mix
In a small bowl, combine paprika, garlic powder, onion powder, cayenne pepper, black pepper, and salt. Mix well.
Season the Chicken
Rub the Cajun spice mix evenly over the chicken breasts. Let it marinate for at least 15 minutes.
Cook the Chicken
Heat a grill or a skillet over medium-high heat. Cook the seasoned chicken breasts for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C). Remove from heat and let rest for a few minutes before slicing.
Assemble the Salad
Prepare the Salad Base
In a large salad bowl, add the chopped Romaine lettuce, bacon bits, and grated Parmesan cheese.
Add Dressing
Pour Renee’s Mighty Caesar dressing over the salad and toss gently to combine.
Top with Chicken
Slice the cooked Cajun chicken breasts and place them on top of the salad. Serve immediately.
