Method
Optional Fir Simple Syrup (make ahead, 15–20 min)
Combine
In a small saucepan combine 0.5 cup sugar and 0.5 cup water. Add 1 tablespoon chopped fresh Douglas fir tips.
Simmer & Steep
Bring to a gentle simmer over medium-low heat, stirring until sugar dissolves. Reduce heat and let very gently simmer 2 minutes; then remove from heat and let steep, covered, 10 minutes.
Strain & Cool
Strain out the fir tips through a fine mesh sieve or cheesecloth. Cool to room temperature, then refrigerate. Use 0.25–0.5 tsp per cocktail if desired to soften bitterness and add forest aroma.
Build & Stir Cocktail
Chill glass
Place a rocks glass or coupe in the freezer or fill it with ice and set aside to chill while you prepare the cocktail.
Measure spirits and aromatics
Add 1 oz Aalborg Akvavit, 1 oz Gobernador Pisco, 1 oz chiaro amaro, and 1 oz blanc vermouth into a mixing glass.
Optional sweetening
If you used the fir simple syrup and want a softer, slightly sweeter drink, add 0.25–0.5 teaspoon of the cooled syrup to the mixing glass. Skip if you prefer bone-dry.
Prepare glass & garnish
Dump the ice from your chilled serving glass. Place a single large clear ice cube if available, or fresh large ice. Express the oils from an orange peel over the glass by holding peel over the drink skin-side down and giving it a firm pinch; then rub the peel around the rim and drop it into the drink.
Strain & finish with fir
Double-strain the stirred cocktail into the prepared glass over the large ice cube. Take a fresh Douglas fir sprig, gently clap it between your palms near your face to release the resinous aroma, then hold it over the cocktail and give one quick light flame pass with a culinary torch (optional, only if you know how to do safely) or simply brush it along the rim and rest it in the drink as garnish to impart pine aroma. Serve immediately.
