Chill glass

Place a coupe or martini glass in the freezer for at least 5 minutes, or fill it with ice water while you prepare the cocktail to chill.

Prepare garnish

Skewer one green olive on a cocktail pick. Gently clap the rosemary sprig between your palms to release its aromatic oils; if using basil, lightly slap the leaf as well.

Build and shake

Fill a cocktail shaker with the measured ice. Add 2 oz Gin Mare, 0.75 oz fresh lemon juice, 0.25 oz dry vermouth, and 0.25 oz simple syrup. Secure the shaker and shake vigorously for 12–15 seconds until the outside of the shaker is frosty and well chilled.

Strain

Dump the ice or water from the chilled glass. Double-strain the cocktail into the chilled coupe or martini glass using a Hawthorne and fine strainer to remove small ice chips and any herb bits.

Garnish and finish

Place the olive on a pick across the rim or drop it into the drink. Float the rosemary sprig on the surface or rest it on the rim; if you prefer more aroma, lightly express the rosemary by waving it briefly over the glass to release oils. Optionally tuck the slapped basil leaf against the rosemary for a bright herbal note.

Serve

Serve immediately while cold. Sip and enjoy the Mediterranean herbal profile of Gin Mare balanced by bright lemon and a touch of vermouth and sweetness.
