Preparation
Chill glass
Place a coupe or chilled rocks glass in the freezer or fill it with ice water while you prepare the cocktail to ensure the drink is cold when served.
Dry shake (if using egg white)
If using egg white, combine gin, fresh lime juice, simple syrup, orange liqueur, bitters, and egg white in a cocktail shaker. Seal and shake vigorously without ice for 12–15 seconds to build a silky foam.
Wet shake
Add ice cubes to the shaker (about 6 cubes). Shake hard for 12–15 seconds until the shaker is very cold to the touch and the exterior has condensation.
Finishing & Serve
Discard ice or water from the chilled glass. Double-strain the cocktail into the chilled coupe or rocks glass using a Hawthorne strainer and a fine mesh strainer to remove small ice shards and any foam particulates.
Serve immediately. If serving on the rocks, pour over 2–3 fresh ice cubes instead of using a coupe.
