Make honey syrup (if not ready)

Combine equal parts honey and hot water (by volume). Stir until honey is fully dissolved. Cool to room temperature before using. Store refrigerated for up to 2 weeks.

Chill glass

Place a coupe or Nick & Nora glass in the freezer or fill with ice water to chill while you prepare the cocktail.

Cocktail assembly

Dry shake (no ice) the gin, fresh lemon juice, honey syrup, Cointreau, orange bitters and egg white (if using) vigorously for 15–20 seconds. This builds froth and integrates the egg white for a silky texture.

Add ice to the shaker and shake vigorously again for 12–15 seconds until the outside of the shaker is well chilled. This chills and dilutes the cocktail to the correct strength.

Discard ice/water from the chilled coupe or Nick & Nora glass. Double-strain the cocktail through a Hawthorne strainer and fine mesh strainer into the chilled glass to remove small ice shards and ensure a smooth texture.

Express the lemon twist over the drink to release oils, then rub the twist around the rim and drop it into the drink, tucking it to resemble a small crown if desired.

Optional: Using a small spoon, lightly sprinkle a pinch of edible gold flakes on the foam or surface for a 'crown jewel' effect. Use sparingly.

Serve immediately. Sip slowly to enjoy the balance of floral gin, bright citrus, soft honey sweetness and the velvety mouthfeel from the egg white.
