Prepare
Chill a coupe or a rocks glass by filling it with ice and setting it aside. If using egg white, separate the egg and reserve the white.
Dry shake (if using egg white)
In a cocktail shaker, combine 2 oz London dry gin, 0.75 oz fresh lemon juice, 0.5 oz simple syrup, 2 dashes orange bitters, and 0.5 egg white. Seal the shaker and dry-shake (no ice) vigorously for 15–20 seconds to build a frothy texture.
Shake with ice
Add 6 ice cubes to the shaker. Shake vigorously for 12–15 seconds until the shaker is cold to the touch and the mixture is well chilled and slightly diluted.
Strain and serve
Discard the ice from your chilled serving glass. Double-strain the cocktail into the coupe or rocks glass (use a fine mesh strainer if you dry-shook) to remove small ice chips and any solids. If you prefer it on the rocks, fill a rocks glass with 4 ice cubes and single-strain over the ice.
Serve
Serve immediately. Sip and enjoy the bright citrus, botanical gin, and subtle sweetness balanced by the orange bitters and silky texture from the egg white if used.
