Steak Bites
Prep steak
Pat the sirloin dry with paper towels. Trim any excess fat and cut into 1-inch uniform cubes so they cook evenly.
Season
In a bowl, toss the steak cubes with kosher salt, black pepper, garlic powder, and smoked paprika until evenly coated. Let rest at room temperature for 10 minutes while you prepare fries.
Sear
Heat a large heavy skillet (cast iron preferred) over high heat until very hot. Add 1 tablespoon vegetable oil and swirl. Arrange steak bites in a single layer without overcrowding (work in batches if necessary). Sear 1.5–2 minutes per side for medium-rare, turning to get a deep brown crust on all sides.
Finish with butter & garlic
When steak is nearly done, reduce heat to medium, add 1 tablespoon butter and the minced garlic to the pan. Spoon the melted butter and garlic over the steak for about 30 seconds to 1 minute to infuse flavor. Remove steak bites to a plate and let rest 3–4 minutes. Sprinkle chopped parsley before serving.
Hand-Cut Fries
Dry
Drain the potatoes and pat completely dry with clean kitchen towels or paper towels. Moisture will cause oil spatter and reduce crispness.
Cook (two options)
Frying: Heat 2–3 inches of vegetable oil in a heavy pot to 325°F (163°C). Blanch the fries in batches for 3–4 minutes until soft but not browned. Remove and drain. Increase oil to 375°F (190°C) and fry again in batches 2–3 minutes until golden and crisp. Drain on paper towels and immediately season with kosher salt, pepper, and garlic powder if using. Roasting (oven): Toss dried fries with 1/2 cup vegetable oil, spread in a single layer on a rimmed baking sheet, and roast in a 425°F (220°C) oven for 25–35 minutes, flipping halfway, until golden and crisp. Season immediately when out of the oven.
Keep warm
If making ahead while searing steak, keep fries on a baking sheet in a 200°F (95°C) oven to stay warm and crisp for up to 15–20 minutes.
Sauces
BBQ Dijon
In a small bowl, whisk together 1/4 cup BBQ sauce and 1 tablespoon Dijon mustard until smooth. Taste and add 1 teaspoon honey if you prefer it sweeter. Adjust seasoning.
