Shrimp & Marinade
Prepare shrimp and marinade
Rinse shrimp under cold water and pat dry with paper towels. Place shrimp in a medium bowl. Add buttermilk, 1 tablespoon lemon juice, 1 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Stir to combine, fully coating the shrimp. Cover and refrigerate for 20–30 minutes (up to 1 hour) to tenderize and help the coating adhere.
Breading
Make dry mix
In a shallow wide bowl or rimmed baking sheet, whisk together 1 cup all-purpose flour and 1/2 cup cornstarch until homogenous. Add 1 tablespoon lemon pepper seasoning, 1 teaspoon paprika, 1/4 teaspoon cayenne (if using), 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix thoroughly so spices are evenly distributed.
Prepare panko
Place 1 cup panko breadcrumbs in a separate shallow dish. You will use panko for a final crunchy coating; keep it separate from the flour mixture.

Make egg wash
In another shallow bowl, whisk 2 large eggs with 2 tablespoons water until smooth.
Dredge shrimp
Working in small batches to avoid overcrowding, remove shrimp from buttermilk, letting excess drip off. Lightly toss shrimp in the flour/cornstarch mixture to coat, then dip into the egg wash, and finally press into the panko breadcrumbs to adhere a good crust. Place breaded shrimp on a wire rack or tray and repeat with remaining shrimp. If coating becomes wet, return to the flour briefly for a light re-dust before panko.
Heat oil
Pour about 3–4 cups neutral oil into a deep, heavy pot or deep skillet, leaving a 2–3 inch headspace. Heat oil over medium-high until it reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small breadcrumb into the oil — it should sizzle immediately and brown in about 45–60 seconds.
Fry shrimp
Carefully add shrimp in batches (do not overcrowd) and fry for 2–3 minutes per batch, turning once, until golden brown and crisp and shrimp are opaque throughout. Use a slotted spoon to transfer shrimp to a paper towel–lined baking sheet to drain. Keep finished batches warm on a low oven (200°F/95°C) if desired while you fry remaining shrimp.
Finish seasoning
While shrimp are still hot, lightly sprinkle with an additional 1/2 teaspoon lemon pepper seasoning (optional) and a pinch of salt to brighten the flavor. Toss gently to coat.
Junction Dip (lemon pepper mayo dip)
Make the dip
In a small bowl, whisk together 1/2 cup mayonnaise, 2 tablespoons plain Greek yogurt, 1 teaspoon lemon juice, 1/2 teaspoon lemon zest, 1 teaspoon lemon pepper seasoning, 1 teaspoon honey, and 1/2 teaspoon hot sauce (if using). Season with 1/8 teaspoon salt and 1/8 teaspoon black pepper. Taste and adjust salt, lemon, or honey to preference. Chill until ready to serve.
Finish & Serve
Plate and garnish
Arrange popcorn shrimp on a serving platter or individual plates. Sprinkle 1 tablespoon finely chopped parsley over the shrimp and serve with lemon wedges and the chilled junction dip on the side for dipping.
Serving suggestion
Serve immediately while hot and crispy. These are great as an appetizer or as part of a casual meal alongside fries, coleslaw, or a green salad.
