Prepare cauliflower

Wash and thoroughly dry 1.5 lbs cauliflower. Cut into bite-sized florets, aiming for even pieces (about 1 to 1½ inches) so they cook uniformly.

Make batter

In a medium bowl, whisk together 1 cup all-purpose flour, 1/2 cup cornstarch, 1 tsp baking powder, 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp smoked paprika, 1 tsp kosher salt, and 1/2 tsp black pepper. Gradually whisk in 1 cup cold water until you have a smooth, slightly thick batter that coats a spoon (adjust with up to 2 tablespoons more water if too thick).

Heat oil

Pour about 1 cup vegetable oil into a large heavy skillet to a depth of roughly 1/2 inch (or use a deep pot with oil depth of 2–3 inches for deep frying). Heat over medium-high until oil reaches 350°F (175°C) or a small batter drop sizzles and browns in about 45–60 seconds.

Batter and fry

Working in batches (do not overcrowd), toss florets in the batter to coat, letting excess drip back into the bowl. Carefully place battered florets into the hot oil and fry until golden and crisp, about 3–4 minutes per side for shallow frying or 3–5 minutes total for deep frying, turning once as needed. Remove with a slotted spoon and drain on a wire rack set over a baking sheet or on paper towels. Repeat until all cauliflower is fried. Keep in a warm oven at 200°F (95°C) if making multiple batches.

Nashville Sauce

Make sauce

In a small saucepan over low heat, melt 1/4 cup unsalted butter. Stir in 1/4 cup hot sauce, 1 tbsp brown sugar, 1 tbsp paprika, 1/2 tsp smoked paprika, 1/2 tsp chili powder, 1/2 tsp garlic powder, 1/4 tsp cayenne pepper, 1 tsp apple cider vinegar, and 1/2 tsp kosher salt. Whisk continuously until butter is fully incorporated and the sauce is glossy and smooth, about 2–3 minutes. Taste and adjust heat/salt: add more cayenne or hot sauce for heat, or a pinch more sugar to tame acidity.

Toss cauliflower in sauce

Place the fried cauliflower in a large mixing bowl while still very hot. Pour the warm Nashville sauce over the cauliflower and toss gently but thoroughly so each piece is evenly coated. Work quickly so the sauce clings to the crispy batter. If you prefer a lighter coating, reserve some sauce to drizzle at service.

To Serve

Arrange the sauced Nashville cauliflower on a platter. Garnish with chopped fresh parsley if using. Serve immediately with dill pickle slices and ranch dressing on the side. Provide lemon wedges if desired for a bright squeeze before eating.
