Preheat

Preheat oven to 425°F (220°C). Position an oven rack about 6 inches (15 cm) from the broiler so the cheese will brown quickly but not burn.

Make garlic butter

In a small bowl, mash the unsalted butter until soft. Stir in minced garlic, chopped parsley, lemon juice, salt, and black pepper until well combined. Taste and adjust seasoning.

Mix cheeses

In a medium bowl combine shredded mozzarella, shredded sharp cheddar and grated Parmesan. Toss in red pepper flakes if using. Mix so the cheeses are evenly distributed.

Assemble Toasts

Arrange the bread slices on a baking sheet lined with parchment paper or a silicone mat.

Spread about 1/2 tablespoon of the garlic butter evenly over one side of each bread slice. Reserve any remaining garlic butter for serving or extra spread.

Divide the three-cheese blend evenly over the buttered side of each slice, pressing lightly so the cheese adheres to the buttered bread. Aim for approximately 2 tablespoons of cheese mixture per slice (adjust to preference).

Bake & Finish

Place the baking sheet in the preheated oven and bake for 6–8 minutes, or until the cheese is melted and bubbling.

Switch the oven to broil (or move rack up if already near broiler) and broil for 1–2 minutes, watching very closely, until the cheese is golden brown and has a few darker spots. Total broil time will vary by oven—do not walk away.

Remove from oven. If desired, brush the crust edges with any leftover garlic butter for extra flavor and gloss. Let toasts rest for 1 minute.

Garnish with a light sprinkle of additional chopped parsley and a pinch of grated Parmesan or red pepper flakes. Serve warm.
