Prep chicken
If breasts are thick, butterfly or pound to an even 1/2" thickness. Pat dry with paper towels. Cut each breast in half crosswise if you want sandwich-sized pieces.
Marinate
In a shallow bowl, combine buttermilk and 1 tablespoon hot sauce. Submerge the chicken pieces, cover, and refrigerate for at least 30 minutes (up to 4 hours) to tenderize and flavor.
Make dry mix
In a wide shallow dish, whisk together flour, cornstarch, paprika, garlic powder, onion powder, cayenne, 1 teaspoon salt, and black pepper.
Dredge chicken
Remove chicken from buttermilk, letting excess drip off. Dredge each piece in the seasoned flour, then dip into the egg wash, then return to the flour for a second coating. Press flour firmly into the chicken to build a thick crust.
Heat oil
Pour oil into a heavy skillet or Dutch oven to a depth of about 1" (about 3-4 cups). Heat over medium-high until thermometer reads 350°F (175°C). If you don't have a thermometer, test with a small pinch of flour — it should sizzle immediately.
Fry
Carefully add chicken pieces in a single layer without crowding. Fry 3–4 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Work in batches to maintain oil temperature. Transfer to a wire rack set over a baking sheet to drain and rest 3–5 minutes.
Buffalo Sauce & Ranch
Make buffalo sauce
In a small saucepan over low heat, combine buffalo wing sauce and butter. Stir until butter melts and sauce is warm and glossy. Alternatively, melt butter and whisk into hot sauce. Keep warm. Reserve 1–2 tablespoons of the sauce for brushing buns if desired.
Toss chicken in sauce
Place fried chicken in a clean bowl. Pour warmed buffalo sauce over chicken and toss gently to coat evenly. For a milder sandwich, toss lightly; for extra heat (Caliente style), toss with additional caliente sauce to taste.
Prepare ranch
If using store-bought ranch, give it a good stir. If desired, thin slightly with 1–2 teaspoons water or milk for easier spreading.
Sandwich Assembly
Melt cheese
Place a sauced chicken piece on the bottom bun, then top with a slice of cheddar. If you prefer melted cheese, place the open sandwich under a broiler or in a hot oven (450°F / 230°C) for 30–60 seconds until cheese softens and begins to melt—watch closely to avoid burning.
Assemble
On the bottom bun (with chicken & cheese), layer lettuce, 2 tomato slices, and 4 pickle slices. Drizzle or spread about 1–2 tablespoons ranch over the vegetables. Add the top bun. If offering Caliente style, add extra caliente sauce to the top bun or directly on the chicken at this stage.
Serve
Serve immediately while hot and crispy. Provide extra ranch and extra buffalo or caliente sauce on the side. Makes 2 sandwiches.
