Prepare the Dates

In a bowl, combine the chopped dates and boiling water. Let it sit for about 10 minutes to soften.

Mix Wet Ingredients

In a separate bowl, cream together the softened butter and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.

Combine Mixtures

Gradually fold the date mixture (with any remaining water) into the butter mixture.

Mix Dry Ingredients

In another bowl, sift together the flour and baking powder. Gently fold the dry ingredients into the wet mixture until just combined.

Bake

Preheat the oven to 180°C (350°F). Pour the batter into a greased baking dish and bake for 30-35 minutes or until a skewer inserted comes out clean.

Serve

Allow the pudding to cool slightly before serving. Serve warm with crème fraîche on the side.
