Brewing Instructions

1. Mashing

In a large brew kettle, heat 3 gallons of water to 165°F (74°C). Add the Pale Malt, Caramel Malt, and Pilsner Malt to the kettle. Stir well to ensure no clumps remain. Maintain the temperature at 152°F (67°C) for 60 minutes.

2. Sparging

After mashing, sparge the grains with an additional 3 gallons of water heated to 170°F (77°C). Collect the wort in the brew kettle.

3. Boiling

Bring the wort to a boil. Once boiling, add the Cascade hops and boil for 60 minutes. 15 minutes before the end of the boil, add the Saaz hops.

4. Cooling & Fermentation

After the boil, cool the wort quickly using a wort chiller or an ice bath. Transfer the cooled wort to a sanitized fermenter and pitch the yeast. Seal the fermenter with an airlock.

5. Lagering

Allow the beer to ferment at room temperature for 1-2 weeks. After primary fermentation, transfer to a secondary fermenter and lager at 35°F (2°C) for 4-6 weeks.

6. Bottling

After lagering, prepare a priming solution with 3/4 cup of corn sugar dissolved in boiling water. Add to the beer and bottle in sanitized bottles. Allow to carbonate for 1-2 weeks.

7. Enjoy
