Prepare the Tart Crust
Make the Dough
In a large bowl, combine the flour, sugar, and salt. Add the cold butter and mix until crumbly. Gradually add ice water, mixing until the dough forms. Wrap in plastic and refrigerate for 30 minutes.
Pre-bake the Crust
Preheat the oven to 375°F (190°C). Roll out the dough and press it into tart pans. Prick the bottom with a fork and bake for 15 minutes until lightly golden. Remove from oven and set aside.
Prepare the Cheddar Filling
Mix the Filling
In a bowl, beat the cream cheese until smooth. Add the eggs, heavy cream, salt, and pepper, mixing until well combined. Fold in the grated cheddar cheese.
Fill the Tarts
Pour the cheese filling into the pre-baked tart crusts, filling them about 3/4 full. Bake for 20-25 minutes until the filling is set and slightly golden on top.
Prepare the Toppings
Prepare the Bourbon Pears
In a small bowl, toss the diced pear with bourbon and let it marinate for 10 minutes.
Assemble the Tarts
Once the tarts are out of the oven and slightly cooled, top each tart with a generous amount of honeycomb and the bourbon marinated pears. Garnish with a sprig of fresh thyme before serving.
