Prepare the Cake

Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the gluten-free chocolate cake mix, eggs, and water. Mix until well blended. Pour the batter into a greased 9-inch round cake pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let it cool completely before removing from the pan.

Make the Chocolate Mousse

In a saucepan over low heat, melt the semi-sweet chocolate chips until smooth. Allow it to cool slightly. In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Gently fold the melted chocolate into the whipped cream until fully incorporated.

Assemble the Cake

Once the cake is completely cooled, slice it horizontally into two layers. Place the bottom layer on a serving plate and spread half of the chocolate mousse over it. Place the second layer on top and spread the remaining mousse on top, smoothing it out with a spatula.

Chill and Serve

Refrigerate the mousse cake for at least 2 hours to set. Before serving, you can sprinkle a pinch of salt on top for an extra flavor boost. Slice and enjoy your rich chocolate midnight mousse cake!
