Prepare the Hollandaise Sauce

In a heatproof bowl, whisk together egg yolks and lemon juice. Place over a pot of simmering water and whisk continuously until thickened. Slowly drizzle in melted butter while whisking until emulsified. Season with salt and pepper to taste.

Cook the Canadian Bacon

In a skillet over medium heat, cook the Canadian bacon slices until heated through and slightly crispy, about 2-3 minutes per side.

Poach the Eggs

Bring a pot of water to a gentle simmer. Add a splash of vinegar. Crack each egg into a small bowl and gently slide into the simmering water. Poach for about 3-4 minutes for runny yolks. Remove with a slotted spoon and drain on a paper towel.

Toast the English Muffins

Split the English muffins and toast them until golden brown.

Assemble the Dish

On each toasted muffin half, place a slice of Canadian bacon, top with a poached egg, and drizzle with Hollandaise sauce. Sprinkle with freshly chopped parsley.
