Main

Method

Prep

  1. 1

    Prepare vegetables and pork

Core the cabbage and cut it into 1/2-inch to 1-inch wide ribbons. Peel and thinly slice the onion. Peel and julienne or grate the carrot. Thinly slice the pork across the grain into bite-sized strips if not pre-sliced. Mince the garlic. Slice the green onions thinly, separating white and green parts.

Cook pork

  1. 2

    Brown the pork

Heat a large wide skillet or wok over medium-high heat until hot. Add 1 tablespoon vegetable oil. When shimmering, add the pork in a single layer (work in batches if needed) and spread so it gets contact with the pan. Season lightly with 1/4 tsp salt and 1/8 tsp black pepper. Sear without moving for 1–2 minutes, then stir and cook until mostly cooked through, about 2–3 more minutes. Remove the pork to a plate and set aside, leaving any rendered fat in the pan.

Sauté vegetables

  1. 3

    Aromatics and onion

Add the remaining 1 tablespoon vegetable oil to the hot pan if needed. Add the white parts of the green onions, sliced onion and minced garlic. Sauté 1–2 minutes until fragrant and translucent, stirring so garlic doesn't burn.

  2. 4

    Add carrot and cabbage

Add the julienned carrot and the cabbage ribbons. Toss to combine and cook, stirring frequently, for 3–5 minutes until the cabbage begins to soften and reduce in volume but still has some bite.

Finish with sauce

  1. 5

    Deglaze and simmer

Pour in the chicken or vegetable stock and rice wine to deglaze any browned bits from the bottom of the pan. Add the soy sauce, sugar, remaining 3/4 tsp salt (adjust to taste), 3/8 tsp black pepper, red pepper flakes if using, and sesame oil. Stir to combine and bring to a gentle simmer.

  2. 6

    Return pork

Return the cooked pork and any accumulated juices to the pan. Stir and simmer with the cabbage for 2–4 minutes until the pork is fully cooked and the cabbage is tender-crisp and sauce has reduced slightly. Taste and adjust seasoning with more salt, soy sauce, or pepper as needed.

Serve

  1. 7

Transfer to a serving dish. Sprinkle the green parts of the scallions and toasted sesame seeds over the top. Serve hot with steamed rice or noodles.
