Pimento Cheese

Make the pimento cheese
In a medium bowl, combine the softened cream cheese and mayonnaise until smooth. Fold in the grated sharp cheddar, chopped roasted red pimentos, Dijon mustard, apple cider vinegar, smoked paprika, hot sauce, salt, and black pepper. Mix until fully incorporated. Taste and adjust seasoning. Refrigerate while you prepare the patties so flavors meld (at least 15 minutes).

Form and season patties
Divide the ground Black Angus beef into two equal portions (for 2 burgers). Gently form each portion into a patty about 3/4"–1" thick and about 4" wide. Avoid overworking the meat. Make a shallow indentation in the center of each patty with your thumb to prevent doming. Season both sides generously with kosher salt and coarsely ground black pepper.

Cook the patties
Heat a heavy skillet or cast-iron pan over medium-high heat and add 1 tablespoon vegetable oil. When oil is shimmering and the pan is very hot, add the patties. Cook undisturbed for 3–4 minutes until a deep brown crust forms. Flip and cook 3–4 more minutes for medium (adjust time for desired doneness). If you want the pimento cheese melted onto the burger, spoon about 2–3 tablespoons of the prepared pimento cheese onto each patty in the last 1–2 minutes of cooking, then cover the pan with a lid briefly to encourage melting.

Toast buns and prepare toppings
Butter the cut sides of the buns lightly. In a separate skillet or the oven, toast the buns cut-side down over medium heat for 1–2 minutes until golden and lightly crisp. Arrange lettuce leaves, tomato slices, red onion rings, and pickle slices so they are ready for assembly.

Place the bottom bun on a plate. If using, spread about 1/2 teaspoon yellow mustard and 1/2 teaspoon ketchup on the bottom bun. Add a lettuce leaf, then place a cooked patty topped with melted pimento cheese. Add two tomato slices, a few onion rings, and pickles. Finish with the top bun. Serve immediately with fries or chips.

Notes: The recipe makes two burgers. Refrigerate leftover pimento cheese in an airtight container for up to 5 days.
