Crouton Base (The Mattress)

    Prepare and crisp the base

    Preheat oven to 375°F (190°C). Trim crusts from the bread slices if desired. Spread softened butter evenly on one side of each slice. Sprinkle garlic powder over the buttered side and, if using, evenly distribute grated Parmesan. Place buttered slices butter-side up on a baking sheet. Toast in the preheated oven for 8–12 minutes, or until edges are golden and centers are crisp but not burned. Remove and let cool slightly, then cut each slice into quarters (or into shapes that will serve as individual 'mattresses').

    Arrange on serving platter

    Arrange the toasted bread pieces on a large serving platter in a single layer to accept the sausage bites. If desired, sprinkle the chopped parsley lightly over the croutons for color.

    Make the glaze

    In a medium saucepan over medium heat, combine the brown sugar, Dijon mustard, apple cider vinegar, Worcestershire sauce, and butter. Stir to dissolve the sugar. Bring the mixture to a gentle simmer and cook for 3–4 minutes, stirring frequently, until the glaze thickens slightly. Taste and add black pepper; adjust sweetness or acidity with an extra 1/2 teaspoon vinegar or 1 tablespoon sugar if desired.

    Coat and warm the sausages

    Add the cocktail sausages to the simmering glaze, stirring to coat each piece completely. Reduce heat to low and simmer for 6–8 minutes, turning occasionally, until the sausages are heated through and the glaze is sticky and clings to them.

    Assemble Pig on a Mattress

    Using tongs or a fork, transfer each glazed sausage onto a prepared toasted crouton (one sausage per crouton). Arrange the finished 'pigs on a mattress' on the serving platter. Spoon any remaining glaze over the arranged bites for extra shine and flavor.

    Serve warm. Provide toothpicks for guests to pick up individual bites. If any glaze remains, keep it warm in the saucepan on the lowest heat or transfer to a small warmed bowl for dipping.
