Method

Grits Base

  1. 1

    Boil liquid

In a medium heavy-bottomed saucepan, bring 4 cups water and 1 cup whole milk to a gentle boil over medium-high heat. Add 1 teaspoon of the salt to the liquid.

  2. 2

    Add grits

Slowly whisk in 1 cup stone-ground grits to the simmering liquid to prevent lumps. Reduce heat immediately to low–medium so mixture maintains a gentle simmer.

  3. 3

    Simmer and stir

Cook, stirring frequently with a wooden spoon or heatproof spatula, for 20–25 minutes until grits are tender and thickened. If grits absorb too quickly and become pasty, add up to 1/2 cup additional water or milk, a few tablespoons at a time, and continue cooking until creamy.

  4. 4

    Finish with butter and cheeses

Remove the pot from heat. Stir in 4 tablespoons unsalted butter until melted and incorporated. Add 1 cup grated sharp cheddar and 2 tablespoons softened cream cheese, stirring until cheeses are fully melted and the mixture is smooth and creamy.

  5. 5

    Season

Taste and adjust seasoning with remaining 1/2 teaspoon salt (if needed), 1/2 teaspoon freshly ground black pepper, and 1/2 teaspoon granulated garlic or garlic powder. If you prefer a richer texture, stir in 1 tablespoon extra butter now.

Finish & Garnish (optional)

  1. 6

Spoon grits into a warmed serving bowl. Sprinkle 2 tablespoons chopped chives or green onions over the top. Offer hot sauce at the table or stir 1 teaspoon into the grits for a mild tang.

  2. 7

Serve the Carolina cheese grits immediately while hot. They pair well with shrimp, fried or grilled meats, or as a creamy side for breakfast.
