Add grits
Slowly whisk in 1 cup stone-ground grits to the simmering liquid to prevent lumps. Reduce heat immediately to low–medium so mixture maintains a gentle simmer.

Simmer and stir
Cook, stirring frequently with a wooden spoon or heatproof spatula, for 20–25 minutes until grits are tender and thickened. If grits absorb too quickly and become pasty, add up to 1/2 cup additional water or milk, a few tablespoons at a time, and continue cooking until creamy.

Finish with butter and cheeses
Remove the pot from heat. Stir in 4 tablespoons unsalted butter until melted and incorporated. Add 1 cup grated sharp cheddar and 2 tablespoons softened cream cheese, stirring until cheeses are fully melted and the mixture is smooth and creamy.

Season
Taste and adjust seasoning with remaining 1/2 teaspoon salt (if needed), 1/2 teaspoon freshly ground black pepper, and 1/2 teaspoon granulated garlic or garlic powder. If you prefer a richer texture, stir in 1 tablespoon extra butter now.

Spoon grits into a warmed serving bowl. Sprinkle 2 tablespoons chopped chives or green onions over the top. Offer hot sauce at the table or stir 1 teaspoon into the grits for a mild tang.
