Mac & Cheese Bites

Cook pasta
Bring a medium pot of salted water to a boil. Add the elbow macaroni and cook until just shy of al dente (about 6–7 minutes). Drain thoroughly and return to pot.

Make cheese sauce
In a separate saucepan over medium heat, melt 2 tbs unsalted butter. Whisk in 2 tbs flour and cook 1 minute to form a roux. Gradually whisk in 1.5 cups whole milk until smooth. Cook, whisking, until slightly thickened, about 3–4 minutes. Reduce heat to low and stir in 1 cup sharp cheddar, 1/2 cup mild cheddar and 2 oz cream cheese until fully melted and smooth. Stir in 1/2 tsp Dijon, 1/4 tsp Worcestershire sauce, 1 tsp kosher salt and 1/2 tsp black pepper. Taste and adjust seasoning.

Combine macaroni and sauce
Fold the drained macaroni into the cheese sauce until evenly coated. Spread the mac & cheese in a shallow dish or rimmed baking sheet and refrigerate uncovered for at least 1 hour (or up to overnight) to firm so they hold shape when fried.

Form bites
When chilled and firm, scoop tablespoons of the mac & cheese and form into compact 1–1.25 inch balls (about 24 bites). Place on a parchment-lined tray and freeze for 15–20 minutes to firm the exterior — this helps maintain shape during breading and frying.

Breading station
Set up three shallow bowls: 1) 1/2 cup flour, seasoned with a pinch of salt and pepper; 2) 2 beaten eggs; 3) 1.5 cups panko breadcrumbs. Lightly dredge each chilled bite in flour, shake off excess, dip into beaten eggs, then roll in panko to fully coat. For extra-crispy coating, repeat the egg and panko step once more. Place breaded bites on a tray and return to freezer for 10 minutes.

Fry
Pour vegetable oil into a medium heavy-bottomed skillet to a depth of about 1/2 inch (approximately 1 cup) and heat over medium-high until oil reaches 350°F (175°C) or a piece of breadcrumb sizzles immediately. Fry bites in batches (do not overcrowd) 2–3 minutes per side, turning gently, until deep golden brown and heated through. Use a slotted spoon to transfer to a paper towel-lined tray to drain. Keep warm in a low oven (200°F / 95°C) while finishing remaining batches.

Cook bacon
In a medium skillet over medium heat, add the diced bacon and cook, stirring occasionally, until fat renders and bacon is crisp, about 8–10 minutes.

Sauté aromatics & peppers
Using a slotted spoon, transfer crisp bacon to a paper towel-lined plate, leaving about 1–2 tbs of bacon fat in the skillet. Add the diced red bell peppers and 1 minced shallot to the hot fat and sauté until the peppers soften and begin to caramelize, about 6–8 minutes. Add 2 minced garlic cloves and cook 30–45 seconds until fragrant.

Build jam
Stir in 1/4 cup brown sugar, 2 tbs apple cider vinegar, 1 tbs maple syrup, 1/4 tsp red pepper flakes, 1/4 tsp black pepper, and 2 tbs water. Bring mixture to a gentle simmer and cook, stirring occasionally, until thick and jammy — about 10–12 minutes. If it reduces too far, add a little water, 1 tsp at a time.

Finish
Stir the reserved crisp bacon back into the pepper mixture and taste; adjust seasoning with salt or extra vinegar/maple if needed. Remove from heat and let cool slightly; the jam will thicken further as it cools.
Finishing & Assemble

To serve, arrange 3–4 fried mac & cheese bites per order on a platter. Spoon 1–2 teaspoons of warm red pepper bacon jam over each bite or offer jam as a dipping sauce on the side. Garnish with finely chopped fresh chives and a light drizzle of optional hot sauce if using.
