Prepare equipment and seeds
Measure 1 cup popcorn kernels and have a large heatproof bowl ready. Mince the rosemary finely so it will distribute evenly.

Heat oil and test kernel
In a large heavy-bottomed pot with a tight-fitting lid, add 2 tablespoons neutral oil and place over medium-high heat. Add two or three kernels and cover. When those test kernels pop, the oil is hot enough.

Pop the popcorn
Add the remaining popcorn kernels in an even layer and cover the pot. Once popping begins, gently shake the pot over the burner occasionally to keep kernels moving and prevent burning. Keep the lid slightly ajar for steam to escape. When popping slows to 2–3 seconds between pops, remove the pot from heat and immediately transfer popcorn to the large bowl to keep it crisp.

Heat butter and infuse rosemary
Wipe out the pot if needed or use a small saucepan. Melt 2 tablespoons unsalted butter over low heat. Add the minced rosemary and gently warm for 30–45 seconds to release aroma; do not brown the butter. Remove from heat.

Combine truffle oil and butter
Stir 1 tablespoon black truffle oil into the warm rosemary butter until blended. This mixture will be the primary coating — add more truffle oil later sparingly if you want a stronger truffle note.

Add cheese and seasoning
While still warm, sprinkle 1 cup grated Parmesan evenly over the popcorn and toss to distribute. Then add 1 teaspoon fine sea salt and 1 teaspoon freshly ground black pepper, tossing again. Taste and adjust: if you want stronger truffle aroma, drizzle up to another 1/2 teaspoon truffle oil and toss lightly.

Finish
If using, scatter 2 tablespoons toasted pine nuts or chopped toasted almonds and an extra 1/4 cup grated Parmesan over the popcorn and give a final gentle toss. For presentation, finish with a light sprinkle (about 1/4 teaspoon) of flaky sea salt.

Serve the popcorn immediately in a large bowl for happy hour. The truffle aroma is most pronounced when freshly made.

To store: keep cooled popcorn in an airtight container at room temperature for up to 24 hours. Re-crisp briefly in a 250°F (120°C) oven for 5–7 minutes if needed, but add truffle oil and Parmesan fresh after re-crisping for best flavor.
