1. Sauté the Aromatics

In a medium saucepan, melt the butter over medium heat. Add the chopped shallots and minced garlic, and sauté until they are translucent and fragrant, about 3-4 minutes.

2. Deglaze with Red Wine

Pour in the red wine and bring it to a boil. Scrape the bottom of the pan to release any browned bits. Reduce the heat to medium and let it simmer for about 10-15 minutes, or until the wine has reduced by half.

3. Add Stock and Herbs

Add the beef stock, thyme, and bay leaf to the saucepan. Bring the mixture back to a boil, then lower the heat and let it simmer for another 20-30 minutes, or until the sauce has thickened and coats the back of a spoon.

4. Season and Strain

Remove the bay leaf and season the demi-glace with salt and pepper to taste. If desired, strain the sauce through a fine-mesh sieve to remove solids for a smoother texture.

5. Serve

Serve the red wine demi-glace warm as a sauce for meats, or allow it to cool and store in the refrigerator for up to a week.
