Prepare the Eggplant

Slice the eggplant into 1/2 inch thick rounds. Sprinkle with salt and let sit for 30 minutes to draw out moisture. Rinse and pat dry.

Fry the Eggplant

In a large skillet, heat 1/2 cup of olive oil over medium-high heat. Fry the eggplant slices until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

Prepare the Groundworks Tomato Sauce

In a saucepan, combine the groundworks tomatoes, minced garlic, salt, and pepper. Simmer for 20 minutes until thickened.

Make the Arugula Pesto

In a food processor, combine arugula, remaining olive oil, pine nuts, and parmesan cheese. Blend until smooth. Adjust seasoning with salt and pepper to taste.

Assemble the Napoleon

Layer the fried eggplant, slices of fresh mozzarella, and tomato sauce in a stack. Drizzle with arugula pesto on top.

Serve warm, garnished with additional pesto and fresh arugula if desired.
