Bring to room temperature
Remove the wagyu filets from the refrigerator 45–60 minutes before cooking and place them uncovered on a plate. Bringing them to near room temperature ensures even cooking and better sear.

Pat dry and season
Pat the filets thoroughly dry with paper towels. Lightly coat both sides with the neutral oil. Season generously on both sides with kosher salt (use about 1/2 tablespoon per side across both steaks) and freshly ground black pepper just before cooking.

Sear the filets
Add 1 tablespoon of neutral oil to the hot pan and swirl to coat. Place the filets in the pan away from you to avoid splatter. Sear undisturbed for 2–3 minutes until a deep brown crust forms. Flip and sear the other side for 2 minutes.

Baste with butter and aromatics
Reduce heat to medium. Add 2 tablespoons unsalted butter, the smashed garlic cloves, and thyme sprigs to the pan. As the butter melts and foams, tilt the pan slightly and spoon the butter, garlic and thyme over the steaks repeatedly (basting) for 1–2 minutes. This adds flavor and helps finish cooking gently.

Check doneness and rest
For wagyu filet, target medium-rare to medium depending on preference. Use an instant-read thermometer: 120–125°F (49–52°C) for rare, 125–130°F (52–54°C) for medium-rare, 130–135°F (54–57°C) for medium. Remove steaks from pan about 5°F (3°C) below target because they will carryover cook. Transfer to a warm plate, tent loosely with foil and rest for 6–8 minutes.

After resting, sprinkle a light pinch of flaky sea salt over each filet. If using a prepared red wine pan sauce or demi-glace, spoon about 1 tablespoon over each steak or serve on the side. Garnish with microgreens or chopped parsley.

Serve
Slice the filet across the grain if serving family-style, or plate whole. Serve immediately with desired sides (potatoes, vegetables, or a light salad).
