    Bring steak to room temperature

    Remove the 12-oz NY strip from the refrigerator 30–45 minutes before cooking and pat dry with paper towels. This promotes even cooking.

    Season

    Season both sides liberally with kosher salt and freshly ground black pepper (about 1 tsp each total). Press the seasoning into the meat so it adheres.

    Preheat grill or cast-iron pan

    Preheat a gas or charcoal grill to high (450–550°F / 230–290°C) or heat a heavy cast-iron skillet over high heat until smoking hot. Make sure grates or pan are clean and well oiled.

    Sear

    Brush the steak lightly with 1 tablespoon neutral oil. Place steak on the hot grill or skillet. For medium-rare (recommended for prime strip), cook 4–5 minutes per side without moving to develop a good char. Adjust 1–2 minutes for rarer/ more well-done as needed. Use tongs to flip once.

    Finish with butter & aromatics

    During the last 1–2 minutes of cooking, add 1 tablespoon unsalted butter, crushed garlic cloves, and thyme sprigs to the pan (or a small butter-topped foil on the grill). If using a skillet, tilt the pan and spoon melted butter over the steak to baste for extra flavor.

    Rest

    Transfer the steak to a cutting board and tent loosely with foil. Rest for 8–10 minutes to allow juices to redistribute before slicing.

    Slice and serve

    Slice the steak against the grain into 1/4–1/2-inch thick slices and serve with the char-grilled vegetables.

Char-grilled Vegetables

    Prepare vegetables

    While the steak comes to room temperature, wash and prepare the vegetables: halve the zucchini lengthwise and then slice into 1/2-inch thick planks; core and cut the red bell pepper into large strips; cut the red onion into 1/2-inch thick rounds; leave baby bella mushrooms whole (stem trimmed) or halved if large.

    Season vegetables

    In a large bowl, toss zucchini, bell pepper, onion, and mushrooms with 2 tablespoons extra-virgin olive oil, 1 tablespoon balsamic vinegar, 1 teaspoon salt, and 1/2 teaspoon black pepper until evenly coated.

    Preheat grill or grill pan

    If using the grill, place vegetables on the grill when the heat is medium-high (about 400–450°F / 200–230°C), or heat a grill pan over medium-high heat. Make sure grates are oiled to prevent sticking.

    Grill the vegetables

    Place vegetables in a single layer on the grill or grill pan. Cook zucchini and onions 3–4 minutes per side until tender with char marks; bell pepper 3–5 minutes per side until skin softens and chars; mushrooms 3–4 minutes per side until browned. Turn as needed for even charring.

    Finish and garnish

    Transfer grilled vegetables to a platter, toss with any accumulated juices, sprinkle with 1 tablespoon chopped fresh parsley, and adjust seasoning to taste with additional salt or pepper if desired. Serve alongside the sliced NY strip.
