    Prepare serving base

    Fill a shallow platter or individual serving plates with crushed or shaved ice to create a stable, cold bed for the oysters.

    Arrange oysters

    Place 6 freshly shucked oysters on the half shell on top of the ice, spacing them evenly. Keep them chilled until ready to serve.

    Set out lemon wedges alongside the oysters for diners who prefer a simple squeeze of citrus in addition to the ponzu.

Serrano Ponzu Sauce

    In a small bowl combine 3 tbs soy sauce, 1 tbs fresh lemon juice, 1 tbs fresh lime juice, 1 tsp rice vinegar, and 1 tsp mirin (plus the optional extra 1/2 tsp mirin if you like it slightly sweeter).

    If using kombu, briefly wipe it with a damp cloth and add the small strip to the mixture for umami depth; remove after 10–15 minutes. (Optional step.)

    Add 1 minced serrano chile (remove seeds for milder heat), 1 tsp finely grated ginger and 1 tsp toasted sesame oil to the bowl. Stir to combine and taste; adjust acidity with a little more lemon or lime juice, or balance salt with a touch more mirin if desired.

    If making ahead, let the sauce rest for 10–15 minutes at refrigerator temperature to allow flavors to marry; remove kombu before serving.

Finishing & Service

    Spoon approximately 1/2 to 1 teaspoon of serrano ponzu onto each oyster just before serving — enough to coat the oyster but not drown it. Taste as you go and adjust amount to preference.

    Garnish each oyster with a small sprinkle of finely chopped cilantro or a single microgreen / thin scallion slice. Add a few pieces of pickled ginger or thin cucumber slice beside the oysters if using.

    Serve immediately with lemon wedges on the side and chilled napkins; advise diners to slurp oysters directly from the shell.
