Chocolate Cakes

Prepare ramekins and oven
Preheat the oven to 220°C (425°F). Generously butter four 6-ounce (180 ml) ramekins, dust the insides with cocoa powder, tapping out the excess. Place ramekins on a baking sheet and set aside.

Melt chocolate and butter
Combine the chopped bittersweet chocolate and cubed unsalted butter in a heatproof bowl set over a gently simmering pot of water (double boiler) or in short bursts in the microwave (20–30 seconds, stirring between bursts) until fully melted and smooth. Remove from heat and let cool slightly (about 2–3 minutes).

Whisk eggs and sugar
In a separate bowl, whisk together the whole eggs, egg yolks, and 100 g granulated sugar until pale and slightly thickened — about 2–3 minutes by hand or 1–2 minutes with an electric mixer on medium speed.

Combine batter
Fold the slightly cooled chocolate-butter mixture into the egg-sugar mixture until evenly combined. Sift the 40 g flour and a pinch of salt over the batter and gently fold just until no streaks of flour remain. Divide the batter evenly among the prepared ramekins, filling each about three-quarters full.

Bake
Bake on the middle rack for 10–12 minutes for a runny molten center (timing may vary by oven and ramekin size). The edges should be set and risen while the centers remain soft. Remove from oven and let sit 1 minute.

Unmold
Run a small knife around the inside edge of each ramekin to loosen the cakes, then invert each onto a serving plate. If they don’t release easily, let rest for another 30 seconds and try again.
Berry Sauce

While cakes bake, combine 200 g mixed berries, 30 g granulated sugar, 1 tbsp lemon juice, and 2 tbsp water in a small saucepan over medium heat. Stir occasionally and bring to a simmer, crushing berries with the back of a spoon to release juices. Simmer gently for 4–6 minutes until softened and sauce has slightly thickened.

Remove from heat. For a smooth sauce, pass through a fine-mesh sieve into a bowl, pressing to extract as much liquid as possible and discarding seeds and solids. For a chunkier sauce, leave as is. Keep warm or return to very low heat until ready to serve.
Vanilla Cream

Just before serving, pour the 240 ml cold heavy cream, 15 g sugar, and 1 tsp vanilla extract into a chilled mixing bowl. Whip by hand or with an electric mixer on medium-high speed until soft peaks form — cream should be smooth and hold shape but still pourable.

Taste and adjust sweetness to preference. Transfer to a piping bag or small bowl for plating.
Finishing

To plate, spoon a tablespoon of warm berry sauce onto each plate and place the inverted molten cake on top or beside it. Add a dollop or quenelle of vanilla cream alongside the cake, and drizzle a little more berry sauce if desired.

Dust the cakes lightly with powdered sugar. Serve immediately while the center is molten.
