Toast buns
Spread 1 tbs butter evenly inside each split-top bun. Heat a large skillet or griddle over medium heat. Place buns buttered-side down and toast until golden brown and slightly crisp, 1–2 minutes. Remove and set aside, keeping warm.
Cook hot dogs
Bring a medium pot of water to a gentle simmer. Add hot dogs and simmer for 4–5 minutes until heated through, or grill over medium heat for 4–6 minutes, turning to get an even char. If using a skillet, melt remaining 1 tbs butter over medium-high heat and sear hot dogs until browned, about 6 minutes, turning frequently.
Red Sauce (signature Maine Red Hot topping)
Heat oil: In a small saucepan or skillet, warm 1 tbs oil over medium heat until shimmering.
Simmer and adjust: Add 2 tbs water to thin the mixture slightly. Bring to a gentle simmer, then reduce heat to low and cook, stirring occasionally, for 6–8 minutes to meld flavors and slightly thicken. Taste and adjust seasoning—add up to 1 tsp sugar if too acidic, more cayenne for heat, or an extra tsp vinegar for brightness.
Finish: Remove from heat and let cool briefly; sauce will thicken as it cools. Keep warm while hot dogs and buns are finished.
Assemble and Serve
Place one cooked hot dog in each toasted bun.
Spoon a generous 1–2 tbs of the warm red sauce down the length of each hot dog so it forms the signature red line. Adjust amount to taste.
Serve immediately while hot. Leftover red sauce can be refrigerated in an airtight container for up to 5 days.
