Method

Sandwich

1

Prepare bacon

Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top if available. Arrange 4 slices of thick-cut bacon in a single layer on the rack. Bake for 15–20 minutes until evenly crisped to your liking. Remove from oven and transfer bacon to a plate lined with paper towels to drain. Reserve 1 teaspoon of bacon fat on the baking sheet if you like for flavor (optional).

2

Toast bread

While bacon is finishing, spread 1 teaspoon butter onto one side of each of the 2 bread slices. Heat a skillet over medium heat. Place bread butter-side-down in the skillet and toast 2–3 minutes until golden and crisp, flip and toast the other side 1–2 minutes. Alternatively, toast in a toaster and butter when hot.

3

Prepare tomato and season

Slice the ripe tomato into 1/4-inch (6 mm) thick slices. Arrange slices on a plate and sprinkle evenly with 1/4 teaspoon kosher salt and 1/8 teaspoon freshly ground black pepper. Let sit 1–2 minutes to draw out flavor.

4

Assemble sandwich

Spread 1 tablespoon mayonnaise on the interior side of each toasted bread slice. On one slice, layer the lettuce leaves, followed by the seasoned tomato slices (overlap as needed), then place the 4 crisp bacon slices on top of the tomato. Top with the second bread slice, mayo-side down. Press gently to compact.

5

Serve

Using a sharp knife, cut the sandwich in half diagonally if desired. Serve immediately. Optional accompaniments: kettle chips, pickle spear, or a small green salad.
