Method
Pasta (prepare multiple varieties)
Boil water and cook pastas
Fill two large stockpots with 4–5 quarts (each) water and bring to a rolling boil. Add 1 1/2 tablespoons kosher salt per pot. Cook spaghetti and penne in separate pots according to package directions until al dente. Cook fresh gnocchi in a third pot (or in one of the two pots after removing boiled pasta) until they float and are tender, about 2–3 minutes. Reserve about 2 cups of starchy pasta cooking water and drain pastas into colanders. Toss each pasta lightly with 1 tablespoon olive oil to prevent sticking and transfer to warm serving pans or chafing dishes.
Sauces (heat and keep warm)
Marinara
Pour marinara into a wide saucepan, add 1 tablespoon olive oil and 2 cloves minced garlic, and simmer on low for 10–15 minutes to refresh flavors. If sauce is very thick, thin with up to 1 cup reserved pasta water or broth until saucy. Adjust salt and pepper to taste. Transfer to a warm serving vessel and keep on low heat or over a double boiler.
Alfredo
In a saucepan over medium heat, melt 4 tablespoons butter. Add 2 cloves minced garlic and cook 30 seconds until fragrant. Add Alfredo sauce and 1/2 cup reserved pasta water or broth, stirring to combine. Simmer gently for 5 minutes, then stir in 1/2 cup grated Parmesan and taste for seasoning. Keep warm in a covered pan; if thick, thin with more pasta water.
Proteins & Vegetables (prepare and hold warm)
Sausage & Meatballs
If not already cooked, brown Italian sausage slices in a skillet with 1 tablespoon olive oil over medium-high heat until fully cooked, about 6–8 minutes. Reheat cooked meatballs in simmering marinara for 8–10 minutes to heat through and let them absorb sauce flavors. Transfer to separate warm serving dishes.
Grilled Chicken
If raw, season chicken breasts with salt and pepper and grill or pan-sear until internal temperature reaches 165°F (74°C). Slice thinly and toss with a little olive oil and 1 tablespoon chopped parsley to keep moist. Place in warm serving tray.
Shrimp
Sauté peeled shrimp in 1 tablespoon butter and 1 clove minced garlic over medium-high heat until pink and just cooked, about 2–3 minutes. Toss with a squeeze of lemon (optional) and keep warm.
Mushrooms & Roasted Vegetables
Sauté mushrooms in 2 tablespoons butter and 1 tablespoon olive oil with 2 cloves minced garlic until golden and any liquid evaporates, about 6–8 minutes; season with salt and pepper. Roast or reheat prepared roasted vegetables at 400°F (200°C) for 8–10 minutes until warmed through, or reheat in a skillet with a drizzle of olive oil. Keep warm in serving pans.
Cheeses & Toppings (prep and arrange)
Grate Parmesan and shred mozzarella if not prepped. Place ricotta in a bowl with a pinch of salt and a drizzle of olive oil for easy spooning. Place bowls of grated cheese, shredded mozzarella, ricotta, red pepper flakes, torn basil, chopped parsley, and toasted pine nuts on the service table for guests to add to their plates.
Assembly & Service (all-you-can-eat pasta bar)
Arrange warm chafing dishes or insulated pans in this suggested order: pastas, sauces, proteins/add-ins, vegetables, cheeses/toppings. Provide tongs or serving spoons for each item. To plate, combine about 2 cups cooked pasta per serving (adjust per guest appetite) with 1/2–1 cup sauce; toss with a splash of reserved pasta water or broth and 1 tablespoon butter or olive oil to create a glossy coat. Offer proteins and vegetables on top or on the side per guest preference. Finish with grated Parmesan and herbs. Refill pans as needed to maintain continuous service.
Keep food at safe temperatures: hot items above 140°F (60°C) using chafers or warmers, and replace or reheat items that have cooled. Label sauce allergens (dairy, nuts) so guests can choose appropriately.
Cleanup & Leftovers
Cool leftover sauces and proteins quickly and refrigerate within two hours. Store pasta separately from sauces to prevent sogginess; toss with a little oil and cool, then refrigerate in airtight containers up to 3–4 days. Reheat gently with a splash of water or broth.
