Wash the basmati rice thoroughly under cold water until the water runs clear. Soak the rice in enough water for at least 30 minutes.

In a large bowl, combine chicken pieces, yogurt, ginger-garlic paste, biryani masala, turmeric powder, red chili powder, and salt. Mix well, ensuring that the chicken is well coated with the marinade. Cover and let it marinate for at least 30 minutes.

Gather the whole spices (bay leaf, cardamom, cloves, cinnamon) and set them aside for cooking.

Cooking the Biryani

In a large pot, heat ghee or oil over medium heat. Add the sliced onions and sauté until golden brown. Remove half for garnishing later.

Add the marinated chicken to the pot with the remaining onions. Cook until the chicken is browned and cooked through, about 10-15 minutes.
