Cooking Directions

1. Prepare the Polenta

In a large saucepan, bring the water and salt to a boil. Gradually whisk in the polenta, reducing the heat to low. Stir continuously for about 30 minutes until the polenta thickens and pulls away from the sides of the pan.

2. Add Cheese

Once the polenta is cooked, remove it from heat and stir in the Parmesan cheese. Mix well until the cheese is fully incorporated.

3. Set the Polenta

Pour the polenta into a greased baking dish and spread it out evenly. Allow it to cool at room temperature for about 1 hour or until set.

4. Cut and Fry

Once the polenta is set, cut it into squares or triangles. In a large skillet, heat the duck fat over medium-high heat. Fry the polenta pieces in the hot duck fat until golden brown and crispy, about 3-5 minutes per side.

5. Serve

Remove the fried polenta from the skillet and place it on paper towels to drain excess fat. Season with black pepper to taste and serve hot.
