Prepare dry ingredients

In a large bowl whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined.

Combine wet ingredients

In a separate bowl whisk the egg until lightly beaten. Add the milk, melted butter, and vanilla extract; whisk until uniform.

Make batter

Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix; a few small lumps are fine.

Add cranberries and pecans

Fold in the dried (or chopped fresh) cranberries and toasted chopped pecans gently so they are evenly distributed through the batter.

Cook pancakes

Heat a nonstick skillet or griddle over medium heat. Add about 1 teaspoon of butter and let it melt and coat the surface. Use a 1/4-cup measure to pour batter onto the hot surface, leaving space between pancakes. Cook until bubbles form on the surface and edges look set, about 2–3 minutes. Flip and cook the other side until golden brown, about 1–2 minutes more. Repeat, adding more butter as needed, to make 8–10 pancakes. Keep finished pancakes warm in a low oven (about 200°F / 95°C) if desired.

Berry syrup (topping)

Combine the cranberries, mixed berries (if using), granulated sugar, and water in a small saucepan over medium heat.

Bring the mixture to a gentle simmer, stirring to dissolve the sugar. Cook until the berries have softened and started to break down, about 8–10 minutes. Use a wooden spoon or spatula to press berries against the side of the pan to release juices and create a syrupy consistency.

Stir in the lemon juice and vanilla extract. Taste and adjust sweetness if needed by adding up to 1 tablespoon more sugar. If you prefer a smoother syrup, carefully mash further or pulse briefly with an immersion blender, then return to the pan and simmer 1 minute more to thicken.

Remove from heat and let the syrup cool slightly; it will thicken as it cools.

To finish and serve

Stack pancakes on plates. Spoon warm berry syrup generously over the top of each stack.

Drizzle a little maple syrup if desired, sprinkle with extra chopped pecans, and dust with powdered sugar for presentation.

Serve immediately while warm.
