Apple Cinnamon Sauté
Prepare apples
Peel, core, and slice 3 firm apples into approximately 1/4-inch thick slices. Toss the slices in a bowl with 1 tablespoon fresh lemon juice and a pinch of salt to keep them from browning and to brighten flavor. Set aside.
Heat pan and melt butter
Place a large nonstick or stainless-steel skillet over medium heat. Add 2 tablespoons unsalted butter and allow it to melt and foam but not brown (about 1 minute).
Begin sautéing apples
Add the apple slices to the pan in an even layer. Cook undisturbed for 2–3 minutes to begin to soften and brown the undersides. Stir or flip the apples and cook another 1–2 minutes until they are starting to soften but still hold shape.
Add sugars and spices
Sprinkle 3 tablespoons packed brown sugar, 1 teaspoon granulated sugar, 1 teaspoon ground cinnamon, and 1/4 teaspoon ground nutmeg evenly over the apples. Stir to coat so the sugar starts to melt and caramelize. Continue cooking for 2–3 minutes, stirring occasionally.
Deglaze and finish sauce
Pour in 2 tablespoons water and 1 teaspoon vanilla extract to deglaze the pan, scraping any browned bits from the bottom with a spatula. Reduce heat to medium-low and simmer 1–2 minutes until the sauce thickens slightly and coats the apples. Taste and adjust seasoning; add the remaining 3/4 teaspoon nutmeg only if you prefer a stronger nutmeg note.
Optional maple finish
Stir in 2 tablespoons maple syrup (optional) for a richer finish and cook 30 seconds more to warm through.
Serve
Remove skillet from heat. Transfer the caramelized apples to pancakes immediately, spooning the warm sauce over each stack. Garnish with a small sprig of fresh parsley or mint if desired. Serve hot.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet over low heat, adding a splash of water if needed to loosen the sauce.
