Make dough
In a large bowl, whisk together 3 cups all-purpose flour and 1/2 tsp salt. Make a well in the center and add 1 cup warm water and 1 tbs vegetable oil (optional). Stir with a fork or chopsticks until shaggy dough forms.

Prepare potato base: ensure 1 cup cooked and riced russet potato is warm and free of excess moisture. Combine with 1/2 cup ricotta (or shredded mozzarella), 1/4 cup grated Parmesan, 1/2 tsp salt, and 1/8 tsp black pepper. Mix until homogeneous but not overly wet; chill 10 minutes to firm up if needed.

Cook potstickers (pork/mushroom): heat a nonstick skillet over medium-high and add 1 tbs vegetable oil. Arrange dumplings flat-side down without overcrowding (you may cook in batches).
