    In a large heavy-bottomed pot, heat the olive oil and butter over medium heat until butter is melted and foaming. Add the chopped onion and cook, stirring occasionally, until translucent and soft, about 6–8 minutes. Add the minced garlic and cook 30–45 seconds until fragrant, taking care not to brown.

    Stir in the ground ginger, cinnamon, and nutmeg and cook for 30 seconds to bloom the spices. Add the pumpkin puree and brown sugar or maple syrup; stir until combined and warmed through, about 2 minutes.

    Pour in the vegetable or chicken stock, scraping up any browned bits from the bottom of the pot. Bring the mixture to a gentle simmer, then reduce heat to low and simmer uncovered for 10–12 minutes to let flavors meld.

    Remove the pot from heat. For a very smooth soup, use an immersion blender to puree the soup directly in the pot until velvety and uniform (about 1–2 minutes). Alternatively, working in batches, carefully transfer soup to a countertop blender, fill no more than half the container, and blend until smooth; return blended soup to the pot.

    Reheat gently over low heat. Stir in the heavy cream or coconut milk and the optional cream cheese/mascarpone until fully incorporated and warmed through—do not boil. Cook 3–4 minutes to marry flavors.

    Remove from heat and stir in the fresh lemon juice to brighten the soup. Taste and adjust seasoning with additional salt, pepper, or a touch more sweetener if desired.
