Prepare Pumpkin

Peel and Cube
Wash the pumpkin. Using a sharp knife, cut off the stem, halve the pumpkin, scoop out seeds and stringy bits, then peel with a vegetable peeler. Cut the flesh into roughly 1-inch cubes so they cook evenly.

Reserve Seeds (optional)
If you plan to use toasted seeds for garnish, rinse the seeds free of pulp, pat dry, toss with a tiny pinch of salt, and set aside to toast later.
Cook Pumpkin

Simmer
Place the cubed pumpkin in a wide, heavy-bottomed skillet or saucepan. Add 2 cups water (just enough to come about halfway up the pumpkin pieces), the granulated sugar, brown sugar, and a pinch of salt. Bring to a gentle boil over medium-high heat, then reduce heat to low so the liquid simmers gently.

Once pumpkin is tender, remove the lid and increase heat to medium-high for 2–4 minutes to reduce the syrup slightly, stirring frequently so the sugar doesn’t burn.

Add Butter and Spices
Lower the heat to low. Stir in the unsalted butter, ground cinnamon, ground nutmeg, vanilla extract, and lemon juice. Toss gently so the cubes are evenly coated and the butter melts into a glossy sauce.

Taste and Adjust
Taste a piece and adjust sweetness or spice as desired: add up to 1 more tablespoon sugar if you like it sweeter, or another pinch of salt to balance.
Optional Garnish and Serve

Toast Seeds (if using)
To toast reserved pumpkin seeds, heat a small dry skillet over medium heat. Add the seeds and toast, stirring, 3–5 minutes until golden and fragrant. Remove from heat and let cool slightly.

Spoon the sweet pumpkin into a serving bowl. Drizzle with a little maple syrup or honey if desired and sprinkle toasted pumpkin seeds over the top. Serve warm or at room temperature.
