    Prepare shrimp

    Rinse the shrimp under cold water and pat dry thoroughly with paper towels. If they are not already peeled and deveined, remove the shell and devein them, leaving tails on or off as preferred. Dry shrimp will sear better.

    Make the marinade

    In a medium bowl combine 2 tablespoons olive oil, 2 tablespoons fresh lemon juice, 2 teaspoons minced garlic, 1 teaspoon smoked paprika, 1 teaspoon red pepper flakes, 1 teaspoon Kosher salt, and 1 teaspoon freshly ground black pepper. Whisk until combined.

    Marinate

    Add the shrimp to the bowl and toss until evenly coated. Let marinate at room temperature for 10 minutes or refrigerate for up to 30 minutes. Do not marinate much longer than 30 minutes — the acid in the lemon will begin to 'cook' the shrimp and change the texture.

    Heat the pan

    Place a large skillet (cast iron or stainless steel recommended) over medium-high heat. Add 1 teaspoon olive oil and 1 tablespoon unsalted butter. Heat until the butter is foamy and the pan is shimmering but not smoking.

    Sear shrimp

    Add the shrimp to the hot pan in a single layer, making sure not to crowd them — cook in batches if necessary. Sear undisturbed for 1.5 to 2 minutes until the underside turns pink and golden. Flip each shrimp and cook another 1 to 1.5 minutes until opaque throughout and slightly firm to the touch. Total cook time per shrimp should be 3–4 minutes depending on size. Do not overcook or they will become rubbery.

    Finish with herbs and lemon

    Remove the pan from heat. Stir in 2 tablespoons chopped fresh parsley (or cilantro) and squeeze the juice of half a lemon over the shrimp. Taste and adjust seasoning with a pinch more salt or pepper if needed.

    Serve

    Transfer shrimp to a serving plate. Serve immediately with lemon wedges and optional crusty bread, rice, or pasta to soak up the pan juices. If preparing for a larger meal, multiply quantities accordingly or keep cooked shrimp warm in a low oven (200°F / 95°C) for up to 10–15 minutes.
