    Rinse and cook rice

    Rinse 2 cups short-grain rice under cold water until the rinse runs mostly clear (about 4–6 rinses). Drain. Combine rinsed rice and 2 1/4 cups water in a rice cooker or a medium pot. If using a pot, bring to a boil, reduce to low, cover and simmer 12–15 minutes until water is absorbed. Let rest, covered, 10 minutes off heat.

    Season rice

    While rice rests, mix 2 tablespoons rice vinegar, 1 teaspoon sugar, and 3/4 teaspoon salt until dissolved. Transfer hot rice to a wide shallow bowl (or hangari). Pour the vinegar mixture over rice and gently fold with a rice paddle or wooden spatula to coat and slightly cool the rice. Fan or let cool to warm (not hot). Stir in 1 teaspoon sesame oil evenly. Keep rice covered with damp cloth until assembly to prevent drying.

Fillings

    Prepare eggs

    Beat 3 eggs with a pinch of salt. Heat a nonstick pan over medium-low with a little vegetable oil (about 1/2 tsp). Pour a thin layer of egg to make a flat omelet about the size of a sheet pan (or make two thin omelets). Cook until set on both sides, transferring to a cutting board. Slice into long 1/2-inch strips. Reserve.

    Prepare carrot

    Peel the carrot and cut into long matchsticks about 3–4 inches long and 1/8–1/4 inch thick. Heat 1/2 tablespoon vegetable oil in a skillet over medium heat. Add carrot matchsticks and a pinch of 1/2 tsp salt; sauté until just tender but slightly crisp, about 3–4 minutes. Remove and cool.

    Prepare cucumber

    Trim cucumber ends and cut into long strips the same length as other fillings. If cucumber is very watery, scoop seeds out or pat strips dry with paper towel to avoid soggy rolls. No cooking required.

    Prepare spinach

    Bring a pot of water to a boil and blanch 3 cups spinach for 20–30 seconds until wilted. Drain and immediately plunge into ice water. Squeeze out excess water gently. Season with 1 teaspoon toasted sesame oil, 1/2 teaspoon soy sauce, and a pinch of salt; mix and set aside.

    Prepare crab sticks / protein

    If using imitation crab, separate sticks lengthwise into strips. If using pre-cooked beef or ham, cut into long thin strips. Optionally warm briefly in a pan with a little oil. Set aside.

    Prepare pickled radish

    If using whole danmuji, slice into long strips comparable to other fillings (about 1/4-inch thick). Keep ready for assembly.

Assembly & finishing

    Set up and spread rice

    Place a bamboo rolling mat on a clean work surface and lay one nori sheet shiny side down (rough side up). Wet your hands with water (or lightly oil) to prevent rice sticking. Scoop about 3/4 to 1 cup of seasoned rice (adjust slightly so one nori sheet covers about 1/4-inch layer) and evenly spread it over the nori, leaving a 1-inch strip free along the top edge of the nori so the roll can seal.

    Arrange fillings

    Across the bottom third of the rice, lay a few strips of each filling in a single line: 2–3 strips of egg, 3–4 carrot matchsticks, 3–4 cucumber strips, 1–2 danmuji strips, 2–3 crab/protein strips, and a small bundle of seasoned spinach. Make sure not to over-pack; keep fillings centered.

    Roll the kimbap

    Lift the edge of the mat and begin to roll away from you, tucking the fillings in as you roll. Press gently but firmly to form a tight cylinder. Continue rolling until you reach the top edge; dampen the exposed 1-inch nori margin with a little water to seal the roll. Repeat with remaining nori and fillings (yielding about 4–5 rolls).

    Finish and slice

    Brush each roll lightly with 1/2 teaspoon toasted sesame oil to add shine and flavor. Sprinkle with toasted sesame seeds if using. Using a sharp knife dipped in water between cuts, slice each roll into 6–8 even pieces (about 3/4-inch thick). Wipe knife and rewet between cuts for clean slices.

    Serve

    Arrange kimbap on a platter and serve at room temperature with soy sauce or a dipping sauce if desired. Leftovers keep wrapped in plastic in the fridge for up to 24 hours (best eaten same day).
